For paragraphs, test a few sentences at the size you will actually use. Look at rhythm, punctuation and line length. For a headline, compare the words from your project instead of the family name alone.

Variable fonts, explained

A variable font stores a supported design space in a single file. Weight, width and optical size controls appear only when the selected file contains those axes. Letter spacing is a layout setting.
